  • 2 russet potatoes
  • 1 tablespoon olive oil
  • 1/2 tablespoon kosher salt
  • 1/2 tablespoon black pepper
  • A vegetable cutter or a sharp knife

Tip: This is the base of the condiment for French fries but you can add more spices or vinegars.

Step 1: Preheat the oven

Tip: If you do not have a cooling rack, simply cover a baking tray with waxed paper and turn it back halfway through the cooking time.
